Besides cloaking for cookie stuffing, (hide the URL from suspicious eyes)
how else do people make major bank with cloaking? Why is hiding content from Google a good thing?

you build lots of pages keyword optimized and only google can see them
and when a visitor is searching for any special keyword, you maybe in front of google because it is a rare keyword, when the vistor try to visit your link he's gonna redirect to your landing page

Can you give an example of a keyword optimized page that doesn't get pwned by Google?

People use cloaking mainly for the sub domain autoblog system.

They write a script that creates a wordpress mu site and then populate the sub domains with either scraped or markov generated text and hammer out some link spam at it.

The autoblog will rank on random phrases but the page will look like gibberish.

The blackhat dude running it will cloak the page so the web spiders see the keyword rich gibberish and real people get nicely directed to a CPA landing page.

It's a short term profit system as you may only survive a few hours/ days before you get de-indexed but I spoke to someone who claimed to be making 5000 blogs per day using this method to make some nice bank.
